Ingredients

  • Green lentils - 100 grams
  • Carrots - 2 medium, grated
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil and then reduce heat to a simmer for about 20 minutes, or until tender. Drain and set aside to cool.
  2. In a large mixing bowl, combine the grated carrots, chopped red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, paprika, salt, and black pepper.
  4. Add the cooled lentils to the mixing bowl with the carrots and onions, then pour the dressing over the top.
  5. Toss everything together until well combined. Adjust seasoning if necessary and let the salad sit for 10 minutes to allow the flavors to meld before serving.
