Ingredients
- Green lentils - 100 grams
- Carrots - 2 medium, grated
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil and then reduce heat to a simmer for about 20 minutes, or until tender. Drain and set aside to cool.
- In a large mixing bowl, combine the grated carrots, chopped red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, paprika, salt, and black pepper.
- Add the cooled lentils to the mixing bowl with the carrots and onions, then pour the dressing over the top.
- Toss everything together until well combined. Adjust seasoning if necessary and let the salad sit for 10 minutes to allow the flavors to meld before serving.
