Ingredients

  • Red lentils - 100 grams
  • Carrots - 150 grams, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili powder - 1/4 teaspoon (optional)
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Rinse the lentils under cold water and cook them in a saucepan with 300 ml of water for about 15 minutes until soft. Drain any excess water and let cool.
  2. In a mixing bowl, combine the cooked lentils, grated carrots, chopped onion, minced garlic, cumin, coriander, paprika, salt, black pepper, chili powder (if using), and fresh parsley. Mix well until all ingredients are evenly combined.
  3. Using your hands, form the mixture into small patties or shape them around the skewers to form kebabs.
  4. Brush the kebabs with olive oil and let them rest for 10 minutes to firm up.
  5. Preheat a grill or barbecue to medium heat. Grill the kebabs for about 5-7 minutes on each side, or until they are golden brown and cooked through.
  6. Remove from the grill and drizzle with lemon juice before serving. Enjoy your lentil and carrot kebabs warm.
