- Quinoa - 150 grams
- Water - 400 ml
- Lemon juice - 30 ml
- Lemon zest - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the quinoa under cold water in a fine mesh strainer for about 2 minutes to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes to steam.
- In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, ground cumin, ground coriander, salt, and black pepper.
- Fluff the quinoa with a fork and transfer it to a large bowl.
- Pour the dressing over the quinoa and add the chopped parsley and cilantro. Mix well until the quinoa is evenly coated.
- Serve warm or at room temperature as a side dish or light main course.
