Ingredients

  • Quinoa - 150 grams
  • Water - 400 ml
  • Lemon juice - 30 ml
  • Lemon zest - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer for about 2 minutes to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for 5 minutes to steam.
  5. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, ground cumin, ground coriander, salt, and black pepper.
  6. Fluff the quinoa with a fork and transfer it to a large bowl.
  7. Pour the dressing over the quinoa and add the chopped parsley and cilantro. Mix well until the quinoa is evenly coated.
  8. Serve warm or at room temperature as a side dish or light main course.
