- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomatoes - 2 medium, diced
- Vegetable broth - 250 ml
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.

- Add the diced bell pepper, zucchini, and tomatoes to the pot, mixing everything together.
- Pour in the vegetable broth, ensuring the ingredients are mostly submerged.
- Cover the pot and let it simmer on low heat for 40-45 minutes, or until the lamb is tender.
- Remove from heat, discard the cinnamon stick, and garnish with fresh cilantro before serving.
