Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Cinnamon stick - 1
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Vegetable broth - 250 ml
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
  5. Mix in the cinnamon stick, cumin, coriander, paprika, turmeric, salt, and black pepper, stirring well to coat the meat with the spices.
  6. Add the diced bell pepper, zucchini, and tomatoes to the pot, mixing everything together.
  7. Pour in the vegetable broth, ensuring the ingredients are mostly submerged.
  8. Cover the pot and let it simmer on low heat for 40-45 minutes, or until the lamb is tender.
  9. Remove from heat, discard the cinnamon stick, and garnish with fresh cilantro before serving.
