Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Yogurt - 100 grams
  • Fresh mint - 1 tablespoon, chopped

Steps

  1. In a bowl, combine olive oil, parsley, minced garlic, cumin, coriander, paprika, cinnamon, salt, black pepper, and lemon juice to create the marinade.
  2. Add the cubed lamb shoulder to the marinade, mixing well to coat evenly. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. While the skewers are grilling, mix the yogurt with chopped mint in a small bowl to create a refreshing sauce.
  7. Serve the skewers hot with the mint yogurt sauce on the side.
