Ingredients

  • Lamb shoulder - 600 grams
  • Garlic - 4 cloves, minced
  • Cumin powder - 2 teaspoons
  • Coriander powder - 2 teaspoons
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Flatbread - for serving

Steps

  1. In a small bowl, mix minced garlic, cumin, coriander, paprika, cinnamon, salt, black pepper, olive oil, and lemon juice to create a marinade.
  2. Rub the marinade all over the lamb shoulder, ensuring it is well coated. Cover and marinate in the fridge for at least 2 hours, preferably overnight.
  3. Preheat the oven to 160°C (320°F).
  4. Place the marinated lamb shoulder in a roasting pan and cover it with aluminum foil.
  5. Roast the lamb in the preheated oven for about 2 hours, or until the meat is tender and easily pulls apart.
  6. Remove the foil for the last 20 minutes of cooking to allow the lamb to brown.
  7. Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  8. Serve the lamb slices warm, garnished with chopped parsley and mint, alongside flatbread.
