- Lamb shoulder - 600 grams
- Garlic - 4 cloves, minced
- Cumin powder - 2 teaspoons
- Coriander powder - 2 teaspoons
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Flatbread - for serving
Steps
- In a small bowl, mix minced garlic, cumin, coriander, paprika, cinnamon, salt, black pepper, olive oil, and lemon juice to create a marinade.
- Rub the marinade all over the lamb shoulder, ensuring it is well coated. Cover and marinate in the fridge for at least 2 hours, preferably overnight.
- Preheat the oven to 160°C (320°F).
- Place the marinated lamb shoulder in a roasting pan and cover it with aluminum foil.
- Roast the lamb in the preheated oven for about 2 hours, or until the meat is tender and easily pulls apart.
- Remove the foil for the last 20 minutes of cooking to allow the lamb to brown.
- Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
- Serve the lamb slices warm, garnished with chopped parsley and mint, alongside flatbread.
