Ingredients

  • Lamb chops - 4 pieces (approximately 300g)
  • Fresh mint leaves - 30g
  • Garlic - 2 cloves
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a food processor, combine fresh mint leaves, garlic, olive oil, ground cumin, ground coriander, smoked paprika, salt, black pepper, and lemon juice. Blend until smooth to create the marinade.
  2. Place the lamb chops in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 1 hour, or preferably overnight.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Remove the lamb chops from the marinade, allowing excess to drip off. Discard the leftover marinade.
  5. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
