  • Lamb shoulder, diced - 300 grams
  • Dried apricots, chopped - 100 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken or vegetable broth - 250 ml
  • Honey - 1 tablespoon
  • Almonds, chopped - 30 grams
  • Fresh cilantro, chopped - 2 tablespoons

Steps

  1. Heat olive oil in a tagine or heavy pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the diced lamb to the pot, browning on all sides for about 5-7 minutes.
  4. Stir in the cumin, cinnamon, ginger, turmeric, salt, and black pepper, cooking for another 2 minutes to release the spices' aromas.
  5. Pour in the broth and add the chopped apricots and honey, stirring to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for 1 hour, stirring occasionally, until the lamb is tender.
  8. Once cooked, sprinkle with chopped almonds and cilantro before serving.
