- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken or vegetable broth - 250 ml
- Honey - 1 tablespoon
- Almonds, chopped - 30 grams
- Fresh cilantro, chopped - 2 tablespoons
Steps
- Heat olive oil in a tagine or heavy pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the diced lamb to the pot, browning on all sides for about 5-7 minutes.
- Stir in the cumin, cinnamon, ginger, turmeric, salt, and black pepper, cooking for another 2 minutes to release the spices' aromas.
- Pour in the broth and add the chopped apricots and honey, stirring to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for 1 hour, stirring occasionally, until the lamb is tender.
- Once cooked, sprinkle with chopped almonds and cilantro before serving.
