Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Dried apricots - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - 2 (for serving)

Steps

  1. In a mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade and mix well to ensure they are evenly coated. Cover and marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Thread the marinated lamb cubes and halved dried apricots onto skewers, alternating between lamb and apricot.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  7. Serve the skewers garnished with fresh parsley and lemon wedges on the side.
