- Water - 200 ml

- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 100 grams, cooked
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium saucepan, bring 200 ml of water to a boil and add 1 teaspoon of salt.
- Once boiling, remove from heat, stir in 150 grams of couscous, cover, and let it sit for 5 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced carrot, zucchini, and red bell pepper to the skillet, sautéing for about 5-7 minutes until tender.
- Stir in the cooked chickpeas, cumin, cinnamon, and coriander, cooking for an additional 3-4 minutes.
- Fluff the couscous with a fork and add it to the vegetable mixture, tossing gently to combine.
- Finish by stirring in the chopped parsley and lemon juice, adjusting seasoning to taste.
