Ingredients

  • Couscous - 150 grams
  • Water - 200 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 100 grams, cooked
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium saucepan, bring 200 ml of water to a boil and add 1 teaspoon of salt.
  2. Once boiling, remove from heat, stir in 150 grams of couscous, cover, and let it sit for 5 minutes.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  4. Add the diced carrot, zucchini, and red bell pepper to the skillet, sautéing for about 5-7 minutes until tender.
  5. Stir in the cooked chickpeas, cumin, cinnamon, and coriander, cooking for an additional 3-4 minutes.
  6. Fluff the couscous with a fork and add it to the vegetable mixture, tossing gently to combine.
  7. Finish by stirring in the chopped parsley and lemon juice, adjusting seasoning to taste.
