- Couscous - 150 grams
- White fish fillets (such as cod or haddock) - 250 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced red bell pepper, carrot, and zucchini to the saucepan and cook for about 5 minutes until softened.
- Stir in the diced tomato, cumin, paprika, coriander, salt, and black pepper. Cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the couscous, stir, and remove from heat. Cover and let it sit for 5 minutes.
- While the couscous is resting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Season the fish fillets with salt and pepper, then cook for about 3-4 minutes on each side until cooked through.
- Fluff the couscous with a fork and serve it on plates topped with the sautéed vegetables and the cooked fish fillets. Garnish with fresh parsley.
