Ingredients

  • Couscous - 150 grams
  • White fish fillets (such as cod or haddock) - 250 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced red bell pepper, carrot, and zucchini to the saucepan and cook for about 5 minutes until softened.
  3. Stir in the diced tomato, cumin, paprika, coriander, salt, and black pepper. Cook for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, add the couscous, stir, and remove from heat. Cover and let it sit for 5 minutes.
  5. While the couscous is resting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Season the fish fillets with salt and pepper, then cook for about 3-4 minutes on each side until cooked through.
  6. Fluff the couscous with a fork and serve it on plates topped with the sautéed vegetables and the cooked fish fillets. Garnish with fresh parsley.
