Ingredients
- Couscous - 150 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Raisins - 50 grams
- Chickpeas (cooked) - 100 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, bring 250 ml of water to a boil. Add a pinch of salt and the couscous, stir, cover, and remove from heat. Let it sit for 5 minutes to absorb the water.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until softened and golden, about 7-8 minutes.
- Stir in the minced garlic, ground cinnamon, cumin, ginger, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Add the raisins and cooked chickpeas to the onion mixture. Cook for an additional 5 minutes, stirring occasionally, until heated through.
- Fluff the couscous with a fork and divide it between two plates. Top each serving with the onion and chickpea mixture.
- Garnish with fresh parsley and serve warm.
