Ingredients

  • Couscous - 150 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Raisins - 50 grams
  • Chickpeas (cooked) - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, bring 250 ml of water to a boil. Add a pinch of salt and the couscous, stir, cover, and remove from heat. Let it sit for 5 minutes to absorb the water.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until softened and golden, about 7-8 minutes.
  3. Stir in the minced garlic, ground cinnamon, cumin, ginger, salt, and black pepper. Cook for another 2 minutes until fragrant.
  4. Add the raisins and cooked chickpeas to the onion mixture. Cook for an additional 5 minutes, stirring occasionally, until heated through.
  5. Fluff the couscous with a fork and divide it between two plates. Top each serving with the onion and chickpea mixture.
  6. Garnish with fresh parsley and serve warm.
