Ingredients

  • Almond flour - 150 grams
  • Psyllium husk powder - 10 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 milliliters

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, salt, ground cumin, and paprika.
  2. In another bowl, whisk together the eggs and olive oil until well combined.
  3. Gradually add the egg mixture to the dry ingredients, mixing until a dough forms.
  4. Knead the dough for a few minutes until smooth, then let it rest for 10 minutes covered with a damp cloth.
  5. While the dough rests, heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  6. Add the diced zucchini and red bell pepper to the skillet, cooking until they are tender, about 5-7 minutes.
  7. Pour in the vegetable broth and bring to a simmer, then reduce the heat.
  8. Roll out the rested dough between two sheets of parchment paper until around 5mm thick, then cut into desired pasta shapes.
  9. Add the cut pasta to the simmering vegetable broth and cook for 3-4 minutes until the pasta floats to the surface.
  10. Stir in the chopped parsley and serve hot, garnished with extra parsley if desired.
