- Almond flour - 150 grams
- Psyllium husk powder - 10 grams
- Eggs - 2 large
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 200 milliliters
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, salt, ground cumin, and paprika.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Gradually add the egg mixture to the dry ingredients, mixing until a dough forms.
- Knead the dough for a few minutes until smooth, then let it rest for 10 minutes covered with a damp cloth.
- While the dough rests, heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
- Add the diced zucchini and red bell pepper to the skillet, cooking until they are tender, about 5-7 minutes.
- Pour in the vegetable broth and bring to a simmer, then reduce the heat.
- Roll out the rested dough between two sheets of parchment paper until around 5mm thick, then cut into desired pasta shapes.
- Add the cut pasta to the simmering vegetable broth and cook for 3-4 minutes until the pasta floats to the surface.
- Stir in the chopped parsley and serve hot, garnished with extra parsley if desired.
