Ingredients

  • Couscous - 150 grams
  • Chickpeas (cooked) - 200 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until soft and fragrant.
  2. Add the diced carrot, zucchini, and bell pepper to the pan, stirring occasionally for about 5 minutes until the vegetables start to soften.
  3. Stir in the diced tomato, cumin, cinnamon, salt, and pepper, and cook for another 5 minutes until the tomato has broken down.
  4. Add the cooked chickpeas and vegetable broth to the vegetable mixture, bringing it to a gentle simmer for 10 minutes.
  5. While the vegetables and chickpeas are simmering, prepare the couscous according to package instructions, using the remaining tablespoon of olive oil and a pinch of salt in the boiling water.
  6. Once the couscous is fluffy, fluff it with a fork and serve it topped with the vegetable and chickpea mixture.
  7. Garnish with fresh parsley before serving.
