- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced zucchini, carrot, and red bell pepper to the pan, cooking for about 5 minutes until they start to soften.
- Stir in the drained chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 3-4 minutes, allowing the spices to blend.
- Pour the vegetable broth into the pan and bring to a simmer. Once simmering, remove from heat.
- In a separate bowl, place the couscous and add 1 tablespoon of olive oil. Pour the hot vegetable broth and vegetable mixture over the couscous, stirring to combine. Cover tightly with a lid and let it sit for 5 minutes.
- After 5 minutes, fluff the couscous with a fork and mix in the vegetables and chickpeas evenly.
- Serve warm, garnished with fresh parsley.
