Ingredients

  • Couscous - 150 grams
  • Chickpeas (canned, drained) - 200 grams
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced zucchini, carrot, and red bell pepper to the pan, cooking for about 5 minutes until they start to soften.
  3. Stir in the drained chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 3-4 minutes, allowing the spices to blend.
  4. Pour the vegetable broth into the pan and bring to a simmer. Once simmering, remove from heat.
  5. In a separate bowl, place the couscous and add 1 tablespoon of olive oil. Pour the hot vegetable broth and vegetable mixture over the couscous, stirring to combine. Cover tightly with a lid and let it sit for 5 minutes.
  6. After 5 minutes, fluff the couscous with a fork and mix in the vegetables and chickpeas evenly.
  7. Serve warm, garnished with fresh parsley.
