- Couscous - 150 grams
- Chicken breast - 200 grams
- Chickpeas (canned) - 200 grams, drained
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Vegetable broth - 300 milliliters
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
- Add the diced carrot and red bell pepper to the pot, cooking for another 5 minutes until softened.
- Cut the chicken breast into bite-sized pieces and add to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the drained chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Pour in the vegetable broth and bring to a simmer. Reduce heat and let it cook for about 15 minutes until the chicken is fully cooked and the mixture is slightly thickened.
- While the chicken mixture is cooking, prepare the couscous. In a separate bowl, combine the couscous with 250 ml of boiling water and let it sit covered for 5 minutes.
- Fluff the couscous with a fork and stir in the remaining tablespoon of olive oil and lemon juice.
- Serve the chicken and chickpea mixture over the fluffy couscous, and garnish with chopped parsley.
