Ingredients

  • Couscous - 150 grams
  • Chicken breast - 200 grams
  • Chickpeas (canned) - 200 grams, drained
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Vegetable broth - 300 milliliters
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Add the diced carrot and red bell pepper to the pot, cooking for another 5 minutes until softened.
  3. Cut the chicken breast into bite-sized pieces and add to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Stir in the drained chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  5. Pour in the vegetable broth and bring to a simmer. Reduce heat and let it cook for about 15 minutes until the chicken is fully cooked and the mixture is slightly thickened.
  6. While the chicken mixture is cooking, prepare the couscous. In a separate bowl, combine the couscous with 250 ml of boiling water and let it sit covered for 5 minutes.
  7. Fluff the couscous with a fork and stir in the remaining tablespoon of olive oil and lemon juice.
  8. Serve the chicken and chickpea mixture over the fluffy couscous, and garnish with chopped parsley.
