Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 300 ml
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Raisins - 30 grams

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
  2. Add the diced carrot, zucchini, and bell pepper to the pan. Cook for another 5-7 minutes until the vegetables begin to soften.
  3. Stir in the cumin, cinnamon, salt, and black pepper. Mix well to coat the vegetables in the spices.
  4. Pour in the vegetable broth and bring to a simmer. Add the raisins, then cover the saucepan and let it cook for about 10 minutes.
  5. While the vegetables are cooking, prepare the couscous. In a separate bowl, add the couscous and pour the hot vegetable broth over it. Cover and let it sit for 5 minutes to absorb the liquid.
  6. Fluff the couscous with a fork and stir in the chopped parsley.
  7. Serve the couscous topped with the vegetable mixture, garnishing with additional parsley if desired.
