- Couscous - 150 grams
- Vegetable broth - 300 ml

- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Raisins - 30 grams
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
- Add the diced carrot, zucchini, and bell pepper to the pan. Cook for another 5-7 minutes until the vegetables begin to soften.
- Stir in the cumin, cinnamon, salt, and black pepper. Mix well to coat the vegetables in the spices.
- Pour in the vegetable broth and bring to a simmer. Add the raisins, then cover the saucepan and let it cook for about 10 minutes.
- While the vegetables are cooking, prepare the couscous. In a separate bowl, add the couscous and pour the hot vegetable broth over it. Cover and let it sit for 5 minutes to absorb the liquid.
- Fluff the couscous with a fork and stir in the chopped parsley.
- Serve the couscous topped with the vegetable mixture, garnishing with additional parsley if desired.
