- Couscous - 200 grams
- Lamb shoulder, cubed - 150 grams
- Chicken thighs, boneless, cubed - 150 grams
- Carrot, sliced - 1 medium
- Zucchini, diced - 1 medium
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Tomato, chopped - 1 medium
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Chickpeas, canned, drained - 100 grams
- Fresh coriander, chopped - 2 tablespoons
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the cubed lamb and chicken to the pot, stirring to brown the meat on all sides.
- Stir in the sliced carrot, diced zucchini, and chopped tomato, cooking for another 5 minutes until the vegetables begin to soften.
- Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper, mixing well to coat the meat and vegetables with the spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and cover, allowing it to simmer for 30 minutes.
- After 30 minutes, add the drained chickpeas to the pot and continue to simmer for an additional 10 minutes.
- While the stew is simmering, prepare the couscous by placing it in a bowl and pouring 250 ml of boiling water over it. Cover and let it sit for 5 minutes, then fluff with a fork.
- To serve, place a generous portion of couscous on each plate, topped with the meat and vegetable stew. Garnish with fresh chopped coriander.
