Ingredients

  • Couscous - 200 grams
  • Lamb shoulder, cubed - 150 grams
  • Chicken thighs, boneless, cubed - 150 grams
  • Carrot, sliced - 1 medium
  • Zucchini, diced - 1 medium
  • Onion, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato, chopped - 1 medium
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Chickpeas, canned, drained - 100 grams
  • Fresh coriander, chopped - 2 tablespoons

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add the cubed lamb and chicken to the pot, stirring to brown the meat on all sides.
  3. Stir in the sliced carrot, diced zucchini, and chopped tomato, cooking for another 5 minutes until the vegetables begin to soften.
  4. Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper, mixing well to coat the meat and vegetables with the spices.
  5. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and cover, allowing it to simmer for 30 minutes.
  6. After 30 minutes, add the drained chickpeas to the pot and continue to simmer for an additional 10 minutes.
  7. While the stew is simmering, prepare the couscous by placing it in a bowl and pouring 250 ml of boiling water over it. Cover and let it sit for 5 minutes, then fluff with a fork.
  8. To serve, place a generous portion of couscous on each plate, topped with the meat and vegetable stew. Garnish with fresh chopped coriander.
