- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken broth - 200 ml
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Start by preparing the cauliflower couscous; grate the cauliflower using a box grater or food processor until it resembles couscous.
- In a bowl, combine the chicken thighs, olive oil, cumin, cinnamon, paprika, salt, and black pepper. Mix well to coat the chicken evenly and let marinate for at least 10 minutes.
- Heat a large skillet over medium heat and add the marinated chicken. Cook for about 5 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced red bell pepper and zucchini to the skillet, cooking for another 5 minutes until the vegetables are slightly tender.
- Pour in the chicken broth and bring to a simmer. Return the chicken to the skillet and let everything simmer together for an additional 5 minutes.
- While the chicken and vegetables are simmering, add the grated cauliflower to a separate pot with a splash of water, cover, and steam for about 5 minutes until tender but not mushy.
- To serve, place a portion of cauliflower couscous on each plate, top with the chicken and vegetable mixture, and garnish with chopped cilantro.
