  • Zucchini - 1, diced
  • Onion - 1 small, finely chopped

  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth - 200 ml
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Start by preparing the cauliflower couscous; grate the cauliflower using a box grater or food processor until it resembles couscous.
  2. In a bowl, combine the chicken thighs, olive oil, cumin, cinnamon, paprika, salt, and black pepper. Mix well to coat the chicken evenly and let marinate for at least 10 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken. Cook for about 5 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic, sautéing until the onion becomes translucent.

  6. Pour in the chicken broth and bring to a simmer. Return the chicken to the skillet and let everything simmer together for an additional 5 minutes.
  7. While the chicken and vegetables are simmering, add the grated cauliflower to a separate pot with a splash of water, cover, and steam for about 5 minutes until tender but not mushy.
  8. To serve, place a portion of cauliflower couscous on each plate, top with the chicken and vegetable mixture, and garnish with chopped cilantro.
