Kouign-Amann is a delightful vegan Moroccan dessert with layers of flaky pastry and a rich, sweet syrup. This version captures the essence of the traditional dish while staying true to plant-based ingredients.

Ingredients
- All-purpose flour - 200 g
- Warm water - 100 ml
- Active dry yeast - 5 g
- Sugar - 50 g
- Salt - 1/2 tsp
- Vegan butter - 75 g, softened
- Brown sugar - 50 g
- Cinnamon - 1 tsp
- Almonds, sliced - 30 g
- Orange blossom water - 1 tsp
Steps
- In a bowl, mix warm water, yeast, and 1 tsp of sugar; let it sit for 10 minutes until frothy.
- In another bowl, combine flour, remaining sugar, and salt. Add the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 30 minutes.
- Once risen, roll out the dough on a floured surface into a rectangle. Spread softened vegan butter evenly over the surface.
- Sprinkle brown sugar and cinnamon over the buttered dough. Fold the dough into thirds, like a letter, and roll it out again into a rectangle.
- Repeat the butter and sugar layering and folding process twice more, then roll out the final rectangle to about 1 cm thickness.
- Cut the dough into squares and place them in a greased baking dish. Sprinkle sliced almonds on top and drizzle with orange blossom water.
- Cover and let rise for another 20 minutes, then preheat the oven to 180°C (350°F).
- Bake for 25-30 minutes until golden brown and caramelized. Allow to cool slightly before serving.
