Ingredients

  • all-purpose flour - 200 grams
  • warm water - 100 milliliters
  • instant yeast - 5 grams
  • salt - 4 grams
  • unsalted butter - 100 grams (for laminating)
  • Greek yogurt - 100 grams
  • honey - 30 grams
  • cinnamon - 1 teaspoon
  • almonds (finely chopped) - 30 grams

Steps

  1. In a mixing bowl, combine warm water, instant yeast, and salt. Let it sit for 5 minutes until foamy.
  2. Gradually add all-purpose flour to the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 30 minutes.
  3. Roll out the dough into a rectangle, then spread half of the butter (50 grams) evenly over the surface.
  4. Fold the dough into thirds like a letter, then refrigerate for 15 minutes.
  5. Repeat the rolling and folding process two more times, refrigerating for 15 minutes each time.
  6. Mix Greek yogurt, honey, cinnamon, and chopped almonds in a bowl to create the high-protein filling.
  7. Preheat the oven to 200°C (400°F).
  8. Roll out the laminated dough one last time and cut into squares. Place a spoonful of the filling in the center of each square.
  9. Fold the corners of the squares toward the center to enclose the filling, pinching to seal.
  10. Place the filled pastries on a baking sheet lined with parchment paper, brush the tops with the remaining melted butter, and sprinkle with a little sugar.
  11. Bake for 25-30 minutes until golden brown and flaky. Let cool slightly before serving.
