- all-purpose flour - 200 grams
- warm water - 100 milliliters
- instant yeast - 5 grams
- salt - 4 grams
- unsalted butter - 100 grams (for laminating)
- Greek yogurt - 100 grams
- honey - 30 grams
- cinnamon - 1 teaspoon
- almonds (finely chopped) - 30 grams
Steps
- In a mixing bowl, combine warm water, instant yeast, and salt. Let it sit for 5 minutes until foamy.
- Gradually add all-purpose flour to the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 30 minutes.
- Roll out the dough into a rectangle, then spread half of the butter (50 grams) evenly over the surface.
- Fold the dough into thirds like a letter, then refrigerate for 15 minutes.
- Repeat the rolling and folding process two more times, refrigerating for 15 minutes each time.
- Mix Greek yogurt, honey, cinnamon, and chopped almonds in a bowl to create the high-protein filling.
- Preheat the oven to 200°C (400°F).
- Roll out the laminated dough one last time and cut into squares. Place a spoonful of the filling in the center of each square.
- Fold the corners of the squares toward the center to enclose the filling, pinching to seal.
- Place the filled pastries on a baking sheet lined with parchment paper, brush the tops with the remaining melted butter, and sprinkle with a little sugar.
- Bake for 25-30 minutes until golden brown and flaky. Let cool slightly before serving.
