- Unsweetened applesauce - 50 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Pitted dates - 50 grams, chopped
- Chopped almonds - 30 grams
- Water - 50 milliliters
Steps
- Preheat your oven to 180°C (350°F) and grease a small kougelhopf mold or a bundt pan.
- In a mixing bowl, combine the almond flour, whole wheat flour, baking powder, ground cinnamon, nutmeg, and salt. Mix well.
- In another bowl, whisk together the honey, applesauce, egg, vanilla extract, and water until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the chopped dates and chopped almonds until evenly distributed.
- Pour the batter into the prepared mold, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the kougelhopf to cool in the mold for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve warm or at room temperature, optionally drizzled with additional honey.
