- Brown rice flour - 150 grams
- Chickpea flour - 50 grams
- Tapioca flour - 30 grams
- Warm water - 200 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Tomato sauce - 100 grams
- Mozzarella cheese - 100 grams, shredded
- Bell pepper - 1, sliced
- Red onion - 1, thinly sliced
- Fresh parsley - a handful, chopped
Steps
- In a mixing bowl, combine the brown rice flour, chickpea flour, tapioca flour, salt, ground cumin, and ground coriander.
- Gradually add warm water to the flour mixture, stirring continuously until a smooth dough forms.
- Knead the dough for about 5 minutes until it becomes elastic, then cover with a cloth and let it rest for 15 minutes.
- Divide the dough into two equal portions and roll each portion into a thin circle (about 1/4 inch thick) on a floured surface.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Cook one dough circle in the skillet for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the second dough circle.
- Spread 50 grams of tomato sauce on each cooked base, then top with shredded mozzarella cheese, sliced bell pepper, and red onion.
- Return the topped Khobz Rgaif to the skillet and cover with a lid. Cook on low heat for about 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the skillet, garnish with chopped parsley, slice, and serve warm.
