  • Brown rice flour - 150 grams
  • Chickpea flour - 50 grams
  • Tapioca flour - 30 grams
  • Warm water - 200 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Bell pepper - 1, sliced
  • Red onion - 1, thinly sliced
  • Fresh parsley - a handful, chopped

Steps

  1. In a mixing bowl, combine the brown rice flour, chickpea flour, tapioca flour, salt, ground cumin, and ground coriander.
  2. Gradually add warm water to the flour mixture, stirring continuously until a smooth dough forms.
  3. Knead the dough for about 5 minutes until it becomes elastic, then cover with a cloth and let it rest for 15 minutes.
  4. Divide the dough into two equal portions and roll each portion into a thin circle (about 1/4 inch thick) on a floured surface.
  5. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  6. Cook one dough circle in the skillet for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the second dough circle.
  7. Spread 50 grams of tomato sauce on each cooked base, then top with shredded mozzarella cheese, sliced bell pepper, and red onion.
  8. Return the topped Khobz Rgaif to the skillet and cover with a lid. Cook on low heat for about 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the skillet, garnish with chopped parsley, slice, and serve warm.
