Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 150 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine whole wheat flour, baking powder, salt, and olive oil. Gradually add warm water and knead until a smooth dough forms. Cover and let it rest for 20 minutes.
  2. Preheat the oven to 220°C (428°F).
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent, then add zucchini, bell pepper, and tomato. Season with cumin, paprika, black pepper, and cook for about 5-7 minutes until vegetables soften.
  4. Roll out the rested dough on a floured surface to about 1 cm thick. Transfer to a baking sheet lined with parchment paper.
  5. Spread the sautéed vegetables evenly over the dough. Sprinkle crumbled feta cheese on top.
  6. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  7. Remove from the oven, garnish with fresh parsley, slice, and serve warm.
