Ingredients

  • Dried khlii beef - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large

Steps

  1. Soak the dried khlii beef in warm water for 30 minutes to rehydrate, then drain and chop into small pieces.
  2. In a tagine or skillet, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent.
  3. Add the minced garlic and diced bell pepper to the skillet, cooking for an additional 3-4 minutes until softened.
  4. Stir in the diced tomato, ground cumin, paprika, salt, and black pepper. Cook for 5 minutes until the tomato has softened.
  5. Add the rehydrated khlii beef to the skillet, mixing well with the vegetable mixture. Cook for another 5-7 minutes to allow the flavors to meld.
  6. Create small wells in the mixture and crack an egg into each well. Cover the tagine or skillet and cook for 5-8 minutes, or until the eggs are set to your preferred doneness.
  7. Garnish with chopped fresh parsley before serving.
