Ingredients

  • Khlii (preserved meat) - 100 grams
  • Eggs - 4 large
  • Olive oil - 1 tablespoon
  • Red bell pepper - 50 grams, diced
  • Onion - 30 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the diced red bell pepper and cook for another 2 minutes.
  4. Add the Khlii to the skillet, breaking it up with a spatula, and cook for 3-4 minutes until heated through.
  5. In a bowl, whisk the eggs with cumin, paprika, salt, and black pepper until well combined.
  6. Pour the egg mixture over the meat and vegetables in the skillet.
  7. Allow the omelette to cook undisturbed for about 3-4 minutes, or until the edges start to set.
  8. Gently lift the edges of the omelette and tilt the skillet to let any uncooked egg flow to the edges.
  9. Once the omelette is mostly set, sprinkle chopped parsley on top.
  10. Fold the omelette in half and cook for an additional minute before sliding it onto a plate.
