- Khlii (preserved meat) - 100 grams
- Eggs - 4 large
- Olive oil - 1 tablespoon
- Red bell pepper - 50 grams, diced
- Onion - 30 grams, finely chopped
- Garlic - 1 clove, minced
- Cumin powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a non-stick skillet over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the diced red bell pepper and cook for another 2 minutes.
- Add the Khlii to the skillet, breaking it up with a spatula, and cook for 3-4 minutes until heated through.
- In a bowl, whisk the eggs with cumin, paprika, salt, and black pepper until well combined.
- Pour the egg mixture over the meat and vegetables in the skillet.
- Allow the omelette to cook undisturbed for about 3-4 minutes, or until the edges start to set.
- Gently lift the edges of the omelette and tilt the skillet to let any uncooked egg flow to the edges.
- Once the omelette is mostly set, sprinkle chopped parsley on top.
- Fold the omelette in half and cook for an additional minute before sliding it onto a plate.
