  • Lamb shoulder - 300 grams, diced

  • Onion - 1 medium, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrots - 2 medium, cut into chunks
  • Zucchini - 1 medium, cut into chunks
  • Red bell pepper - 1 medium, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 5 minutes.
  2. Add the diced lamb to the skillet, browning it on all sides for about 7-10 minutes.
  3. Stir in the ground cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for another 2 minutes to toast the spices.
  4. Add the carrots, zucchini, and red bell pepper to the skillet, mixing well. Cover and let it simmer on low heat for 25 minutes, stirring occasionally.
  5. Once the lamb is tender and the vegetables are cooked, remove from heat. Stir in the lemon juice and fresh parsley.
  6. Serve hot, garnished with additional parsley if desired.
