Ingredients

  • Dried carob pods - 100 grams
  • Water - 300 ml
  • Almonds - 30 grams
  • Cinnamon powder - 1 teaspoon
  • Honey or maple syrup - 2 tablespoons (optional, for sweetness)
  • Salt - a pinch

Steps

  1. Rinse the dried carob pods under cold water to remove any dust.
  2. In a medium saucepan, add the rinsed carob pods and water. Bring to a boil over medium heat.
  3. Reduce the heat and let it simmer for about 20 minutes, or until the carob pods are soft.
  4. Remove from heat and let it cool slightly before straining the liquid into a bowl, discarding the pods.
  5. Add the cinnamon powder, honey or maple syrup (if using), and a pinch of salt to the strained liquid. Stir well until combined.
  6. Chop the almonds roughly and add them to the mixture, stirring to incorporate.
  7. Pour the mixture into a shallow dish and let it cool completely to set. Refrigerate for at least 1 hour.
  8. Once set, cut into squares or bars and enjoy your Kharoub snack.
