- Almond flour - 150g
- Mozzarella cheese - 100g, shredded
- Cream cheese - 50g
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Tomato - 1 medium, diced
- Eggplant - 100g, diced
- Red bell pepper - 1/2, diced
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix almond flour, mozzarella cheese, cream cheese, egg, olive oil, salt, paprika, cumin, and garlic powder until a dough forms.
- Spread the dough between two sheets of parchment paper to form a pizza crust, about 0.5 cm thick.
- Transfer the crust to a baking sheet and bake for 10-12 minutes or until golden brown.
- While the crust is baking, heat a pan over medium heat and add a little olive oil.
- Sauté the diced eggplant and red bell pepper until softened, about 5-7 minutes.
- Add the diced tomato, lemon juice, and chopped cilantro to the pan, stirring to combine. Cook for an additional 3-4 minutes until the mixture is well combined and slightly thickened.
- Once the crust is done, remove it from the oven and spread the zaalouk mixture evenly over the top.
- Return the pizza to the oven and bake for another 5 minutes.
- Remove from the oven, slice, and serve warm.
