Ingredients

  • Almond flour - 150g
  • Mozzarella cheese - 100g, shredded
  • Cream cheese - 50g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Tomato - 1 medium, diced
  • Eggplant - 100g, diced
  • Red bell pepper - 1/2, diced
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix almond flour, mozzarella cheese, cream cheese, egg, olive oil, salt, paprika, cumin, and garlic powder until a dough forms.
  3. Spread the dough between two sheets of parchment paper to form a pizza crust, about 0.5 cm thick.
  4. Transfer the crust to a baking sheet and bake for 10-12 minutes or until golden brown.
  5. While the crust is baking, heat a pan over medium heat and add a little olive oil.
  6. Sauté the diced eggplant and red bell pepper until softened, about 5-7 minutes.
  7. Add the diced tomato, lemon juice, and chopped cilantro to the pan, stirring to combine. Cook for an additional 3-4 minutes until the mixture is well combined and slightly thickened.
  8. Once the crust is done, remove it from the oven and spread the zaalouk mixture evenly over the top.
  9. Return the pizza to the oven and bake for another 5 minutes.
  10. Remove from the oven, slice, and serve warm.
