Ingredients
- Ground beef - 300 grams
- Eggplant - 150 grams
- Tomato - 100 grams
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lettuce leaves - 4 large
- Feta cheese - 50 grams, crumbled
Steps
- Preheat the oven to 200°C (392°F).
- Slice the eggplant into rounds and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and roast in the oven for 20 minutes or until tender.
- While the eggplant is roasting, in a mixing bowl, combine the ground beef, minced garlic, cumin, paprika, salt, and black pepper. Mix well and form into two equal patties.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat and cook the beef patties for about 4-5 minutes on each side or until they reach your desired doneness.
- In a separate pan, dice the roasted eggplant and tomato. Sauté them together over medium heat until the tomato is soft and the mixture is well combined, about 5 minutes. Stir in chopped cilantro and adjust seasoning if necessary.
- To assemble the burgers, place each beef patty on a lettuce leaf, top with the zaalouk mixture and sprinkle with crumbled feta cheese. Serve immediately.
