Ingredients

  • Eggplant - 300 grams
  • Tomatoes - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplant into cubes and spread them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for 25 minutes until tender and slightly golden.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the diced tomatoes, cumin, paprika, coriander, black pepper, and salt to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
  5. Once the eggplant is done roasting, add it to the skillet with the tomato mixture. Stir well to combine and cook for another 5 minutes.
  6. Remove from heat and stir in chopped parsley and lemon juice.
  7. Transfer the mixture to a baking dish and bake in the oven for an additional 10 minutes.
  8. Serve warm, garnished with additional parsley if desired.
