Ingredients
- Eggplant - 300 grams
- Tomatoes - 200 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the eggplant into cubes and spread them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for 25 minutes until tender and slightly golden.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced tomatoes, cumin, paprika, coriander, black pepper, and salt to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
- Once the eggplant is done roasting, add it to the skillet with the tomato mixture. Stir well to combine and cook for another 5 minutes.
- Remove from heat and stir in chopped parsley and lemon juice.
- Transfer the mixture to a baking dish and bake in the oven for an additional 10 minutes.
- Serve warm, garnished with additional parsley if desired.
