- Cauliflower - 300 grams, cut into florets
- Zucchini - 150 grams, diced
- Bell pepper - 100 grams, diced
- Eggplant - 150 grams, diced
- Tomato - 100 grams, chopped
- Red onion - 50 grams, diced
- Garlic - 3 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 200 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the cauliflower, zucchini, bell pepper, eggplant, tomato, red onion, and garlic.
- Drizzle the olive oil over the vegetables and sprinkle with cumin, coriander, cinnamon, paprika, salt, and black pepper. Toss to coat evenly.
- Transfer the vegetable mixture to a baking dish and pour the vegetable broth over it.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the vegetables are tender and slightly caramelized.
- Garnish with fresh parsley before serving.
