  • Cauliflower - 300 grams, cut into florets
  • Zucchini - 150 grams, diced
  • Bell pepper - 100 grams, diced
  • Eggplant - 150 grams, diced
  • Tomato - 100 grams, chopped
  • Red onion - 50 grams, diced
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 200 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the cauliflower, zucchini, bell pepper, eggplant, tomato, red onion, and garlic.
  3. Drizzle the olive oil over the vegetables and sprinkle with cumin, coriander, cinnamon, paprika, salt, and black pepper. Toss to coat evenly.
  4. Transfer the vegetable mixture to a baking dish and pour the vegetable broth over it.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the vegetables are tender and slightly caramelized.
  7. Garnish with fresh parsley before serving.
