Ingredients

  • Cauliflower rice - 300 grams
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Carrot - 1 small, diced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 5 minutes until the vegetables soften.
  4. Add the cauliflower rice to the skillet and mix well with the vegetables.
  5. Sprinkle in the ground cumin, coriander, paprika, turmeric, salt, and black pepper, stirring to coat the cauliflower and vegetables evenly.
  6. Cover the skillet and allow to cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  7. Remove from heat and stir in the fresh parsley and lemon juice.
  8. Serve warm, garnished with additional parsley if desired.
