Ingredients

  • Lamb shoulder - 400 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Water - 250 milliliters
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Cauliflower florets - 200 grams

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large mixing bowl, combine the lamb chunks, olive oil, minced garlic, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Mix well to coat the lamb evenly.
  3. Add the chopped cilantro and lemon juice to the lamb mixture, and stir until well combined.
  4. In a Dutch oven or casserole dish, place the marinated lamb and pour in the water.
  5. Add the sliced zucchini, chopped bell pepper, and cauliflower florets around the lamb.
  6. Cover the dish with a lid or aluminum foil and bake in the preheated oven for 1.5 hours, or until the lamb is tender.
  7. Remove from the oven, let it rest for 10 minutes, then serve hot.
