- Lamb shoulder - 400 grams, cut into chunks
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Water - 250 milliliters
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Cauliflower florets - 200 grams
Steps
- Preheat the oven to 160°C (320°F).
- In a large mixing bowl, combine the lamb chunks, olive oil, minced garlic, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Mix well to coat the lamb evenly.
- Add the chopped cilantro and lemon juice to the lamb mixture, and stir until well combined.
- In a Dutch oven or casserole dish, place the marinated lamb and pour in the water.
- Add the sliced zucchini, chopped bell pepper, and cauliflower florets around the lamb.
- Cover the dish with a lid or aluminum foil and bake in the preheated oven for 1.5 hours, or until the lamb is tender.
- Remove from the oven, let it rest for 10 minutes, then serve hot.
