Ingredients

  • Almond flour - 100 grams
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 150 grams
  • Olive oil - 2 tablespoons
  • Bell peppers (red and green) - 100 grams each, diced
  • Tomato puree - 100 grams
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, 1 tablespoon of olive oil, egg, and half of the mozzarella cheese to form a dough.
  3. Spread the dough onto a baking sheet lined with parchment paper to form a pizza base, making it about 1/2 cm thick.
  4. Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
  5. While the base is baking, heat the remaining olive oil in a pan over medium heat and add the minced garlic, diced bell peppers, cumin, paprika, salt, and black pepper. Sauté until the peppers are soft, about 5-7 minutes.
  6. Stir in the tomato puree and let the mixture simmer for another 5 minutes, allowing the flavors to meld.
  7. Remove the pizza base from the oven and spread the pepper-tomato mixture evenly over it.
  8. Sprinkle the remaining mozzarella cheese and crumbled feta cheese on top.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with fresh parsley, slice, and serve hot.
