Ingredients
- Almond flour - 100 grams
- Egg - 1 large
- Mozzarella cheese (shredded) - 150 grams
- Olive oil - 2 tablespoons
- Bell peppers (red and green) - 100 grams each, diced
- Tomato puree - 100 grams
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, 1 tablespoon of olive oil, egg, and half of the mozzarella cheese to form a dough.
- Spread the dough onto a baking sheet lined with parchment paper to form a pizza base, making it about 1/2 cm thick.
- Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
- While the base is baking, heat the remaining olive oil in a pan over medium heat and add the minced garlic, diced bell peppers, cumin, paprika, salt, and black pepper. Sauté until the peppers are soft, about 5-7 minutes.
- Stir in the tomato puree and let the mixture simmer for another 5 minutes, allowing the flavors to meld.
- Remove the pizza base from the oven and spread the pepper-tomato mixture evenly over it.
- Sprinkle the remaining mozzarella cheese and crumbled feta cheese on top.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh parsley, slice, and serve hot.
