- Almond flour - 100g
- Ground psyllium husk - 15g
- Baking powder - 5g
- Salt - 2g
- Egg - 1 large
- Water - 120ml
- Olive oil - 15ml
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 2g
- Paprika - 2g
- Fresh cilantro - 10g, chopped
- Feta cheese - 30g, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, ground psyllium husk, baking powder, and salt.
- In a separate bowl, whisk together the egg, water, and olive oil until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- On a parchment-lined baking sheet, flatten the dough into a round flatbread shape, about 1 cm thick.
- Bake the flatbread in the preheated oven for 15 minutes or until golden brown.
- While the flatbread is baking, heat a skillet over medium heat and add a splash of olive oil.
- Sauté the garlic for 1 minute, then add the diced red and green bell peppers, cooking until softened, about 5-7 minutes.
- Stir in the diced tomato, cumin, paprika, and salt, cooking for an additional 5 minutes until the mixture is well combined and heated through.
- Remove the flatbread from the oven and top with the sautéed vegetable mixture.
- Sprinkle crumbled feta cheese on top if desired and return to the oven for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
