Ingredients

  • Almond flour - 100g
  • Ground psyllium husk - 15g
  • Baking powder - 5g
  • Salt - 2g
  • Egg - 1 large
  • Water - 120ml
  • Olive oil - 15ml
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 2g
  • Paprika - 2g
  • Fresh cilantro - 10g, chopped
  • Feta cheese - 30g, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, ground psyllium husk, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, water, and olive oil until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. On a parchment-lined baking sheet, flatten the dough into a round flatbread shape, about 1 cm thick.
  6. Bake the flatbread in the preheated oven for 15 minutes or until golden brown.
  7. While the flatbread is baking, heat a skillet over medium heat and add a splash of olive oil.
  8. Sauté the garlic for 1 minute, then add the diced red and green bell peppers, cooking until softened, about 5-7 minutes.
  9. Stir in the diced tomato, cumin, paprika, and salt, cooking for an additional 5 minutes until the mixture is well combined and heated through.
  10. Remove the flatbread from the oven and top with the sautéed vegetable mixture.
  11. Sprinkle crumbled feta cheese on top if desired and return to the oven for an additional 5 minutes.
  12. Garnish with fresh cilantro before serving.
