Ingredients
- Red bell pepper - 1 large
- Green bell pepper - 1 large
- Tomatoes - 2 medium (about 250g)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 2 large
Steps
- Preheat your oven to 200°C (400°F).
- Cut the red and green bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet. Roast in the oven for 20 minutes until the skin is blistered.
- While the peppers are roasting, chop the tomatoes and set aside.
- Once the peppers are roasted, remove them from the oven, and let them cool slightly. Peel off the skins and chop the peppers into small pieces.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped tomatoes, roasted peppers, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally until the mixture is thickened.
- Transfer the vegetable mixture into a baking dish and make two small wells in the mixture. Crack an egg into each well.
- Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the eggs are set to your desired doneness.
- Remove from the oven, sprinkle with fresh parsley, and serve warm.
