Ingredients

  • Red bell pepper - 1 large
  • Green bell pepper - 1 large
  • Tomatoes - 2 medium (about 250g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 2 large

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the red and green bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet. Roast in the oven for 20 minutes until the skin is blistered.
  3. While the peppers are roasting, chop the tomatoes and set aside.
  4. Once the peppers are roasted, remove them from the oven, and let them cool slightly. Peel off the skins and chop the peppers into small pieces.
  5. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Add the chopped tomatoes, roasted peppers, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally until the mixture is thickened.
  7. Transfer the vegetable mixture into a baking dish and make two small wells in the mixture. Crack an egg into each well.
  8. Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the eggs are set to your desired doneness.
  9. Remove from the oven, sprinkle with fresh parsley, and serve warm.
