Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Cauliflower florets - 200 grams
  • Canned diced tomatoes - 200 grams
  • Chicken broth - 200 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe skillet or tagine, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  4. Season the chicken thighs with salt, black pepper, cumin, coriander, paprika, and cinnamon.
  5. Add the seasoned chicken thighs to the skillet and brown them on both sides for about 5 minutes.
  6. Stir in the red bell pepper, zucchini, and cauliflower florets, mixing well.
  7. Pour the diced tomatoes and chicken broth into the skillet, bringing the mixture to a simmer.
  8. Cover the skillet with a lid or foil and transfer it to the oven.
  9. Bake for 30-35 minutes, or until the chicken is cooked through and tender.
  10. Remove from the oven, garnish with fresh cilantro, and serve hot.
