- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Cauliflower florets - 200 grams
- Canned diced tomatoes - 200 grams
- Chicken broth - 200 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe skillet or tagine, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Season the chicken thighs with salt, black pepper, cumin, coriander, paprika, and cinnamon.
- Add the seasoned chicken thighs to the skillet and brown them on both sides for about 5 minutes.
- Stir in the red bell pepper, zucchini, and cauliflower florets, mixing well.
- Pour the diced tomatoes and chicken broth into the skillet, bringing the mixture to a simmer.
- Cover the skillet with a lid or foil and transfer it to the oven.
- Bake for 30-35 minutes, or until the chicken is cooked through and tender.
- Remove from the oven, garnish with fresh cilantro, and serve hot.
