Ingredients
- 2 large bell peppers (red or yellow) - halved and seeds removed
- 300 grams ground lamb or beef
- 50 grams walnuts - chopped
- 1 small onion - finely chopped
- 2 cloves garlic - minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/2 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley - chopped (for garnish)
- 100 grams feta cheese - crumbled (optional)
Steps
- Preheat your oven to 190°C (375°F).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened (about 3-4 minutes).
- Add the ground lamb or beef to the skillet, breaking it up with a spoon. Cook until browned (about 5-7 minutes).
- Stir in the chopped walnuts, cumin, coriander, cinnamon, smoked paprika, salt, and pepper. Cook for another 3-4 minutes until well combined and fragrant.
- Remove the skillet from heat and let the mixture cool slightly. If using, fold in the crumbled feta cheese.
- Place the halved bell peppers in a baking dish, cut side up. Generously fill each pepper with the meat mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.
- Garnish with chopped fresh parsley before serving.
