Ingredients

  • 2 large bell peppers (red or yellow) - halved and seeds removed
  • 300 grams ground lamb or beef
  • 50 grams walnuts - chopped
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley - chopped (for garnish)
  • 100 grams feta cheese - crumbled (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened (about 3-4 minutes).
  3. Add the ground lamb or beef to the skillet, breaking it up with a spoon. Cook until browned (about 5-7 minutes).
  4. Stir in the chopped walnuts, cumin, coriander, cinnamon, smoked paprika, salt, and pepper. Cook for another 3-4 minutes until well combined and fragrant.
  5. Remove the skillet from heat and let the mixture cool slightly. If using, fold in the crumbled feta cheese.
  6. Place the halved bell peppers in a baking dish, cut side up. Generously fill each pepper with the meat mixture.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.
  9. Garnish with chopped fresh parsley before serving.
