Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Cherry tomatoes (halved) - 100 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine olive oil, minced garlic, paprika, cumin, coriander, cayenne pepper, salt, black pepper, and lemon juice to create a marinade.
  3. Add the shrimp to the marinade, ensuring they are well coated. Let them marinate for 15 minutes.
  4. In a baking dish, spread the cherry tomatoes evenly on the bottom.
  5. Place the marinated shrimp on top of the tomatoes in a single layer.
  6. Bake in the preheated oven for 12-15 minutes, or until the shrimp are pink and cooked through.
  7. Remove from the oven and garnish with chopped fresh parsley before serving.
