Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Feta cheese - 50g, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Greek yogurt - 100g
  • Lemon juice - 1 tablespoon
  • Sliced tomatoes - 1 medium
  • Fresh mint leaves - 2 tablespoons, chopped
  • Lettuce leaves - 4 large

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the eggplant into 1.5 cm thick rounds and place them in a bowl.
  3. Drizzle olive oil over the eggplant slices and sprinkle with cumin, paprika, cayenne pepper, salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Grill the eggplant slices for about 5-7 minutes on each side, until they are tender and have grill marks.
  5. While the eggplant is grilling, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, parsley, and mint in a small bowl. Season with salt to taste.
  6. Once the eggplant is done, remove it from the grill and let it cool slightly.
  7. Assemble the burger by placing a grilled eggplant slice on a lettuce leaf, topping it with crumbled feta cheese, sliced tomatoes, and a generous dollop of the yogurt sauce.
