- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Feta cheese - 50g, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Greek yogurt - 100g
- Lemon juice - 1 tablespoon
- Sliced tomatoes - 1 medium
- Fresh mint leaves - 2 tablespoons, chopped
- Lettuce leaves - 4 large
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the eggplant into 1.5 cm thick rounds and place them in a bowl.
- Drizzle olive oil over the eggplant slices and sprinkle with cumin, paprika, cayenne pepper, salt, black pepper, and garlic powder. Toss to coat evenly.
- Grill the eggplant slices for about 5-7 minutes on each side, until they are tender and have grill marks.
- While the eggplant is grilling, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, parsley, and mint in a small bowl. Season with salt to taste.
- Once the eggplant is done, remove it from the grill and let it cool slightly.
- Assemble the burger by placing a grilled eggplant slice on a lettuce leaf, topping it with crumbled feta cheese, sliced tomatoes, and a generous dollop of the yogurt sauce.
