Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese - 1 cup, shredded
  • Cream cheese - 100 grams, softened
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Zucchini - 100 grams, thinly sliced
  • Bell pepper (red or yellow) - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, olive oil, garlic powder, cumin, paprika, cinnamon, salt, and black pepper. Mix until a dough forms.
  3. Place the dough on a baking sheet lined with parchment paper and spread it out into a circular pizza shape, about 1/4 inch thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. While the crust is baking, prepare the vegetable toppings. In a skillet over medium heat, sauté the zucchini, bell pepper, and red onion until tender, about 5-7 minutes. Season with salt and pepper.
  6. Remove the crust from the oven and add the sautéed vegetables and halved cherry tomatoes on top of the pizza.
  7. Return the pizza to the oven and bake for an additional 5-7 minutes until the vegetables are slightly roasted.
  8. Remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh parsley before slicing and serving.
