Ingredients
- Almond flour - 1 cup
- Mozzarella cheese - 1 cup, shredded
- Cream cheese - 100 grams, softened
- Egg - 1 large
- Baking powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Zucchini - 100 grams, thinly sliced
- Bell pepper (red or yellow) - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, olive oil, garlic powder, cumin, paprika, cinnamon, salt, and black pepper. Mix until a dough forms.
- Place the dough on a baking sheet lined with parchment paper and spread it out into a circular pizza shape, about 1/4 inch thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- While the crust is baking, prepare the vegetable toppings. In a skillet over medium heat, sauté the zucchini, bell pepper, and red onion until tender, about 5-7 minutes. Season with salt and pepper.
- Remove the crust from the oven and add the sautéed vegetables and halved cherry tomatoes on top of the pizza.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the vegetables are slightly roasted.
- Remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh parsley before slicing and serving.
