Ingredients
- Quinoa - 100 grams
- Water - 250 ml
- Olive oil - 1 tablespoon
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Almonds - 20 grams, chopped (for garnish)
Steps
- Rinse the quinoa under cold water in a fine-mesh strainer until the water runs clear.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for another minute to toast the spices.
- Once the quinoa is ready, fluff it with a fork and combine it with the sautéed vegetables in the skillet. Stir in chopped parsley and lemon juice, mixing well to combine.
- Serve the dish warm, garnished with chopped almonds.
