Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Almonds - 20 grams, chopped (for garnish)

Steps

  1. Rinse the quinoa under cold water in a fine-mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  3. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced red bell pepper and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
  5. Stir in the ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for another minute to toast the spices.
  6. Once the quinoa is ready, fluff it with a fork and combine it with the sautéed vegetables in the skillet. Stir in chopped parsley and lemon juice, mixing well to combine.
  7. Serve the dish warm, garnished with chopped almonds.
