Ingredients

  • Chicken thighs - 4 pieces (about 600g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, mix together the olive oil, minced garlic, cumin, coriander, paprika, cinnamon, turmeric, salt, black pepper, and lemon juice to create a marinade.
  3. Add the chicken thighs to the bowl and coat them evenly with the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin-side up.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving.
  7. Garnish with chopped fresh cilantro and serve hot.
