Ingredients

  • Cauliflower - 300g
  • Almond flour - 50g
  • Grated Parmesan cheese - 30g
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons (for frying)
  • Lettuce leaves - 4 (for serving)
  • Sliced tomato - 1 medium (for serving)
  • Sliced avocado - 1/2 medium (for serving)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam them for about 10 minutes until tender.
  3. Drain the cauliflower well and allow it to cool slightly before transferring it to a mixing bowl.
  4. Mash the cauliflower with a fork until it is a smooth consistency.
  5. Add the almond flour, grated Parmesan cheese, egg, garlic powder, ground cumin, ground coriander, smoked paprika, salt, black pepper, and chopped parsley to the bowl. Mix until all ingredients are well combined.
  6. Shape the mixture into two burger patties.
  7. Heat olive oil in a non-stick skillet over medium heat. Once hot, place the burger patties in the skillet and cook for about 5-7 minutes on each side, or until golden brown and crispy.
  8. Remove the patties from the skillet and let them rest on a paper towel for a minute.
  9. Serve the cauliflower burgers on lettuce leaves, topped with sliced tomato and avocado.
