Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 small, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower and chop it into florets.
- In a food processor, pulse the cauliflower florets until it resembles rice grains. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
- Add the minced garlic, diced red bell pepper, and diced carrot to the skillet. Cook for another 5 minutes until the vegetables are softened.
- Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 1-2 minutes to release the spices' flavors.
- Add the cauliflower rice to the skillet and mix well to combine with the vegetables and spices.
- Cover the skillet and cook for about 10 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat, stir in the fresh parsley and lemon juice before serving.
