Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 small, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower and chop it into florets.
  2. In a food processor, pulse the cauliflower florets until it resembles rice grains. Set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
  4. Add the minced garlic, diced red bell pepper, and diced carrot to the skillet. Cook for another 5 minutes until the vegetables are softened.
  5. Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 1-2 minutes to release the spices' flavors.
  6. Add the cauliflower rice to the skillet and mix well to combine with the vegetables and spices.
  7. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the cauliflower is tender.
  8. Remove from heat, stir in the fresh parsley and lemon juice before serving.
