Ingredients
- Chicken thighs - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chicken broth - 250 ml
- Almond flour - 100 grams
- Psyllium husk - 1 tablespoon
- Egg - 1 large
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add minced garlic, grated ginger, cumin, cinnamon, turmeric, and paprika. Cook for another 2 minutes until fragrant.
- Add the chicken thighs to the skillet and season with salt and black pepper. Brown the chicken on both sides for about 5-7 minutes.
- Pour in the chicken broth, cover the skillet, and let it simmer for 20 minutes until the chicken is cooked through.
- While the chicken is simmering, prepare the 'keto bread'. In a mixing bowl, combine almond flour, psyllium husk, and a pinch of salt.
- Add the egg and mix until a dough forms. Shape the dough into a flatbread and place it on a baking sheet lined with parchment paper.
- Bake the flatbread in the oven for 15-20 minutes until golden brown.
- Once the chicken is done, remove it from the skillet and shred it into bite-sized pieces.
- To serve, place the baked flatbread on a plate, top it with the shredded chicken and pour the sauce over it. Garnish with fresh cilantro.
