Ingredients

  • Chicken thighs - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chicken broth - 250 ml
  • Almond flour - 100 grams
  • Psyllium husk - 1 tablespoon
  • Egg - 1 large
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add minced garlic, grated ginger, cumin, cinnamon, turmeric, and paprika. Cook for another 2 minutes until fragrant.
  4. Add the chicken thighs to the skillet and season with salt and black pepper. Brown the chicken on both sides for about 5-7 minutes.
  5. Pour in the chicken broth, cover the skillet, and let it simmer for 20 minutes until the chicken is cooked through.
  6. While the chicken is simmering, prepare the 'keto bread'. In a mixing bowl, combine almond flour, psyllium husk, and a pinch of salt.
  7. Add the egg and mix until a dough forms. Shape the dough into a flatbread and place it on a baking sheet lined with parchment paper.
  8. Bake the flatbread in the oven for 15-20 minutes until golden brown.
  9. Once the chicken is done, remove it from the skillet and shred it into bite-sized pieces.
  10. To serve, place the baked flatbread on a plate, top it with the shredded chicken and pour the sauce over it. Garnish with fresh cilantro.
