Ingredients
- Lamb shoulder - 400 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 30 grams, chopped
- Raisins - 20 grams (optional, for a hint of sweetness)
- Water - 250 ml
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the lamb chunks and brown them on all sides, about 6-8 minutes.
- Add the ground cumin, coriander, cinnamon, ginger, turmeric, salt, and black pepper. Stir to coat the meat evenly with the spices.
- Pour in the water and bring to a simmer. Cover the pot and transfer it to the preheated oven.
- Bake for 1 hour, checking occasionally to ensure there is enough liquid. If it looks too dry, add a bit more water.
- After 1 hour, add the chopped almonds and raisins (if using) to the pot. Stir gently and bake uncovered for an additional 15-20 minutes.
- Once done, remove from the oven and let it rest for 5-10 minutes before serving.
- Garnish with fresh cilantro and serve hot.
