Ingredients

  • Lamb shoulder - 400 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 30 grams, chopped
  • Raisins - 20 grams (optional, for a hint of sweetness)
  • Water - 250 ml
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the lamb chunks and brown them on all sides, about 6-8 minutes.
  5. Add the ground cumin, coriander, cinnamon, ginger, turmeric, salt, and black pepper. Stir to coat the meat evenly with the spices.
  6. Pour in the water and bring to a simmer. Cover the pot and transfer it to the preheated oven.
  7. Bake for 1 hour, checking occasionally to ensure there is enough liquid. If it looks too dry, add a bit more water.
  8. After 1 hour, add the chopped almonds and raisins (if using) to the pot. Stir gently and bake uncovered for an additional 15-20 minutes.
  9. Once done, remove from the oven and let it rest for 5-10 minutes before serving.
  10. Garnish with fresh cilantro and serve hot.
