Ingredients
- 2 large bell peppers (any color) - halved and seeds removed
- 300g ground lamb (or beef)
- 1 cup cauliflower rice
- 1 small onion - finely chopped
- 2 cloves garlic - minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp olive oil
- 50g feta cheese - crumbled
- 2 tbsp fresh parsley - chopped
- Salt and pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the ground lamb (or beef) and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Add the cauliflower rice to the skillet, then mix in cumin, coriander, smoked paprika, cinnamon, cayenne pepper (if using), salt, and pepper. Cook for another 5 minutes until the cauliflower is tender.
- Remove the skillet from heat and fold in crumbled feta cheese and chopped parsley.
- Stuff the halved bell peppers with the meat and cauliflower mixture, packing it tightly.
- Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are slightly golden.
- Serve warm, garnished with additional parsley if desired.
