Ingredients

  • 2 large bell peppers (any color) - halved and seeds removed
  • 300g ground lamb (or beef)
  • 1 cup cauliflower rice
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp olive oil
  • 50g feta cheese - crumbled
  • 2 tbsp fresh parsley - chopped
  • Salt and pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in the ground lamb (or beef) and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  5. Add the cauliflower rice to the skillet, then mix in cumin, coriander, smoked paprika, cinnamon, cayenne pepper (if using), salt, and pepper. Cook for another 5 minutes until the cauliflower is tender.
  6. Remove the skillet from heat and fold in crumbled feta cheese and chopped parsley.
  7. Stuff the halved bell peppers with the meat and cauliflower mixture, packing it tightly.
  8. Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are slightly golden.
  10. Serve warm, garnished with additional parsley if desired.
