Ingredients

  • Ground beef - 250 grams
  • Ground lamb - 250 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Cauliflower - 400 grams, riced
  • Olive oil - 2 tablespoons
  • Chicken broth - 120 ml
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine ground beef, ground lamb, almond flour, egg, parsley, cumin, coriander, paprika, cinnamon, salt, pepper, and minced garlic. Mix until well combined.
  2. Form the mixture into small meatballs, about 2.5 cm in diameter.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking for about 5-7 minutes until browned on all sides and cooked through. Remove meatballs from skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and riced cauliflower. Sauté for about 5 minutes until the cauliflower is tender.
  5. Pour in the chicken broth and lemon juice, stirring well. Let it simmer for an additional 3-4 minutes until the liquid is mostly absorbed.
  6. Serve the Moroccan spiced meatballs on a bed of cauliflower rice, garnished with additional parsley if desired.
