Ingredients
- Ground beef - 250 grams
- Ground lamb - 250 grams
- Almond flour - 30 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Cauliflower - 400 grams, riced
- Olive oil - 2 tablespoons
- Chicken broth - 120 ml
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, combine ground beef, ground lamb, almond flour, egg, parsley, cumin, coriander, paprika, cinnamon, salt, pepper, and minced garlic. Mix until well combined.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking for about 5-7 minutes until browned on all sides and cooked through. Remove meatballs from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and riced cauliflower. Sauté for about 5 minutes until the cauliflower is tender.
- Pour in the chicken broth and lemon juice, stirring well. Let it simmer for an additional 3-4 minutes until the liquid is mostly absorbed.
- Serve the Moroccan spiced meatballs on a bed of cauliflower rice, garnished with additional parsley if desired.
